An ebike tour with local guide Matic Horvat takes me through the Šavrini hills and the descent to Koper. The port city offers a delightful orange and ginger ice cream, a perfect treat. As the day winds down, I indulge in an aperitivo at Manzioli wine bar, sampling fresh rosé from local winemaker Zaro. The wine's minerality, influenced by its proximity to the water and salt, captivates my palate.

The Pier of Tastes food market, held monthly, showcases the region's culinary prowess. I join Nina Golob from the tourist board to visit artisan producers, including Tilen Praprotnik, who revives indigenous grape varieties, and Korenika & Moškon, where I sample various olive oils.
